Samovar is an open-source controller based on the ESP32 for automating rectification, distillation, brewing and sous-vide cooking. The project has been developed since October 2020: more than 2,400 commits, active development, GPL-3.0 license.

About the author

I am an electronics engineer, the author of the Samovar firmware and circuit design. I have been developing embedded systems on the ESP32 and Arduino for more than 5 years. Samovar started as a personal project to automate home rectification, and grew into a full open-source platform used by hundreds of moonshiners and brewers.

All the firmware code, schematics and documentation are open on GitHub. The project lives on the support of its community: users send bug reports, suggest features and share their modifications. If you have built a Samovar, write on the forum and tell us about your experience.

Why open source

The controller manages heating, the pump and take-off while working with hot liquids and steam. Here, safety is not a marketing word but a requirement. Open code means anyone can check the emergency shutdown logic instead of taking our word for it. GPL-3.0 guarantees that the project will stay free.
