  1. Wash

    Ferment sugar, grain or fruit into a wash, and check the gravity before it goes anywhere near the still.

  2. Stripping run

    Boil the wash down to a low-proof spirit in one pass, with no cuts yet.

  3. Spirit run

    Redistill the stripped spirit and split it into foreshots, heads, hearts and tails.

  4. Rest and dilution

    Dilute the hearts to drinking strength by mass, not by a simple ratio, then let it rest.

  5. Aging

    Age on oak chips or in a barrel, and track how much the angels take each year.
