Description

Peter Dixon’s published cultured mozzarella: 100 lb (12 gallons) milk, pasteurized 145 °F / 30 min, cooled to 98–100 °F. 5 DCU (½ tsp) CHOOZIT TA062 or TA060, or 1/5 dose CSL Jointec B13, or 1 lb CSL STA bulk. After 1–2 h, at pH 6.40–6.50 add 7–9 ml single-strength rennet. Floc is faster at this temperature; multiply by 3 (sheet example 5 min × 3 = 15 min). Cut hazelnut. Rest 5 min, stir 5–10 min. Settle 30–60 min to 0.25 %TA or curd pH 6.0. Drain; hold cakes until 0.35–0.40 %TA or pH 5.2–5.3. Stretch in 170–180 °F water with 3 oz salt per gallon. Yield is not published. Not the vinegar direct-acid sheet and not Adamant’s clabber mozzarella.
