Wallace Ibores: 3 gallons goat milk at 86 °F, 1/16 tsp MA4002, ¼ tsp rennet, rest 60 + 60 minutes, cut to ¼ inch. Press in stages to 75 lb, brine 3 hours, then a smoked-paprika and olive-oil rind. Age 4–6 weeks (traditionally 3–4 months).
