Cheesemaking program

 

The program is set on the "Program" («Программа») tab of the main page of the Cheesemaking mode. Each line is one stage; stages run in order. A program can have up to 20 stages.

When you change the stage type, the line fields are reset to the defaults for that type, and unneeded fields are hidden. The values are checked on saving: temperature from 0 to 150°C, time from 0 to 1440 min. On an error the message "Check the fields of stage N" («Проверьте поля этапа N») is shown, and such a program is not sent to Samovar.

 

Save program («Сохранить программу») - send the program to Samovar. While cooking is in progress, the "Process" («Процесс») tab uses the last saved program, not unsaved edits.
Export («Экспорт») - download the program to the file cheese-program.txt.
Import («Импорт») - load a program from a text file. The file is checked in the same way as editor lines; on an error the current program does not change.

 

 

In the file and in Samovar's memory a line is stored as six fields separated by semicolons:

The meaning of the "Value1-4" fields depends on the stage type (see the table below). The "Stirrer" field is four numbers separated by ^: device^rpm^run, s^pause, s. For example:

H;63;90;1;1^0^0^0;0 - heat to 63°C at 1°C/min, timeout 90 min, the stirrer runs through the relay for the whole stage, the "Boiler" sensor;
M;0;1;0;1^0^30^0;0 - stirring: the stirrer is switched on through the relay once for 30 s;
W;0;15;1;0^0^0^0;0 - the manual action "Add starter culture", wait for confirmation for no more than 15 min;
N;32;120;6.4;0^0^0^0;0 - hold 32°C until the pH drops to 6.4, for no more than 120 min.

 

 

In all stages except "Stirring" («Перемешивание»), the "Timeout, min" («Тайм-аут, мин») field is the maximum time of the stage: if the stage does not finish within this time, cheesemaking stops. "Sensor" («Датчик») is the temperature sensor the stage works by: "Boiler" («Куб»), "Water" («Вода»), "Column section" («Царга»), "Steam" («Пар») or "TCA" («ТСА»). The temperature is considered reached when the sensor reading stays within ±0.3°C of the target for 10 seconds in a row.

 

H - Heating («Нагрев»). Fields: "Target, °C" («Цель, °C»), "Timeout, min", "Rate, °C/min" («Скорость, °C/мин»), "Sensor". The heating setpoint rises from the starting temperature at the given rate until it reaches the target. The stage ends when the sensor has reached the target.

P - Hold («Выдержка»). Fields: "Target, °C", "Hold, min" («Выдержка, мин»), "Total timeout, min" («Общий тайм-аут, мин»), "Sensor". Samovar holds the target. The hold time is counted in full while the temperature differs from the target by no more than the tolerance. The tolerance is the "Setpoint excursion" («Вылет за уставку») field of the stage sensor on the Settings - Temperature tab («Настройки - Температура»): from 0.3°C to 3°C; a value below 0.3°C (including 0) is treated as 0.3°C. When the temperature is under the target by more than the tolerance, the time is counted partially - the less, the bigger the shortfall; with a shortfall of 3°C or more, and also with an overshoot above the tolerance, the time is not counted at all: the message "Hold paused: temperature is outside the band" («Выдержка приостановлена: температура вне полосы») arrives, and after the temperature returns, "Hold resumed" («Выдержка продолжена»). The stage ends when the set time has accumulated. The total timeout counts from the start of the stage and cannot be less than the hold; when it expires, the process stops with "Hold timeout" («Тайм-аут выдержки»).

C - Cooling («Охлаждение»). Fields: "Target, °C", "Timeout, min", "Sensor". Heating is off; while the temperature is above the target, cooling water is supplied (more than 1°C above the target - full flow, closer - minimum). The stage ends when the sensor has reached the target; cooling is then turned off. The "pump" or "two valves" cooling scheme is required.

M - Stirring. Field: "Duration, min" («Длительность, мин»). A stirrer is required. The stage ends when the duration expires, or, if the stirrer has a run time without a pause set, immediately after it has run for that time once. The stage has no timeout.

D - Dosing («Дозирование»). Fields: "Volume, ml" («Объём, мл»), "Timeout, min", "Method" («Способ») and a third field that depends on the method.
"Manual" («Вручную») - the third field is "Component" («Компонент») (the same list as for the manual action). Samovar waits until the cheesemaker adds the component and presses "Confirm" («Подтвердить»).
"Local stepper motor" («Локальный шаговый двигатель») - the third field is "Rate, ml/min" («Скорость, мл/мин»). The volume is delivered by Samovar's standard peristaltic pump; the volume and rate are converted to steps using the pump calibration, so the pump must be calibrated (Pump). The stage ends when the pump has run the set volume. The dosing device options are described on the page Additive dosing units.

N - Wait for pH («Ожидание pH»). Fields: "Temperature, °C" («Температура, °C»), "Timeout, min", "Target pH" («Целевой pH»), "Sensor". Samovar holds the temperature and watches the pH sensor. The stage ends when the pH is not above the target for 30 seconds in a row. If the pH reading is unreliable (no data or outside 0-14) for more than 10 seconds, cheesemaking stops with the message "pH unreliable for 10 seconds" («pH недостоверен 10 секунд»). The stage needs a saved pH calibration.

W - Manual action («Ручное действие»). Fields: "Timeout, min", "Action" («Действие»). Samovar does nothing (except for the stirrer, if one is set) and waits for "Confirm" to be pressed. The list of actions: "Add starter culture" («Внести закваску»), "Add enzyme" («Внести фермент»), "Add additive" («Внести добавку»), "Cut the curd" («Разрезать сгусток»), "Transfer to molds" («Переложить в формы»), "Start or change pressing" («Начать или изменить прессование»), "Flip the cheese" («Перевернуть сыр»), "Other action" («Другое действие»). The action name serves as a hint in the program; in the status line Samovar shows only "Manual action".

S - Drain («Слив»). Field: "Timeout, min". The drain valve (relay No. 4) opens and Samovar waits for "Confirm" to be pressed. The valve closes on moving to the next stage. A stirrer cannot be set on this stage.

L - Lua. Field: "Timeout, sec" («Тайм-аут, сек»). A script from the file selected in the "Lua stage" («Lua-этап») window is started (any .lua file from Samovar's memory; the timeout and the parameters that the script receives in the arg table are also set there, see Lua). To move to the next stage, the script must call setNextProgram(). If the script ends without this call or with an error, cheesemaking stops. A stirrer cannot be set on this stage.

 

 

The stirrer is set separately in each line and runs only during that stage. Five fields:

When moving to the next stage, the stirrer stops and is started again according to the settings of the new line.
